OVERNIGHT SUCCESS

6303If there is one thing I don’t get enough of in my 24 hour day, it’s sleep. Before I had my twins, you would see me get up before my alarm clock would go off. By the time I finished freshening up and was sitting in my closet trying to figure out what to wear…my alarm clock would start buzzing. I always had ample time to pull a look together, spend a few minutes in front of the mirror to put some makeup on and head to the kitchen to make a mean breakfast.

Fast forward a few months later and you will find a whole different story. I am usually caught hitting the snooze button and my saved alarm..it rings every 5-minutes! I seriously feel like 24 hours is not enough for a day. I always need more time to pull my look together, do my hair and makeup…and don’t get me started about breakfast.

Or maybe we should start with breakfast first…6301

Ever since I got pregnant, my babies have altered my taste buds and made me crave fruits. Lots and lost of fruits! Seriously. During my pregnancy I was hoping to get cravings of greasy unhealthy cheeseburgers, deep fried onions, ice cream and pickles. The works. Instead my babies made me crave plums, strawberries, blueberries, pineapple, pomegranate, and watermelons. I would view snaps of other pregnant bloggers and they would indulge in greasy fatty goodness, and I would crave healthy. So no surprise there, I altered my breakfast routine from pancakes and poached eggs to yummy delicious overnight oats!6300

For the last week I have been indulging in overnight oats, trying various recipes to find one that would convince my husband to give up his daily french toast. Best part, it took me less than 2 minutes to prepare!

Recipe for Overnight Success Oats

  • ¾ cup Quaker Large Flake Oats
  • 1 ¼ cups vanilla Greek yogurt
  • 1 tbsp hemp hearts
  • ¼ tsp vanilla extract
  • Pinch fine sea salt, optional
  • 1/3 cup chopped fresh strawberries, divided (1/4 cup plus topping)
  • 1/3 cup fresh blueberries, divided (1/4 cup plus topping)
  • ¼ tsp lemon zest
  1. In a Mason jar or bowl, add Quaker Oats, Greek yogurt, hemp hearts, vanilla extract and sea salt. Stir to combine.
  2. Stir in ¼ cup strawberries and ¼ cup blueberries. Top with remaining strawberries, blueberries and lemon zest.
  3. Cover and refrigerate overnight.

Yup, out of all the different recipes I tried this was the one the hubs loved the most…and it only took me 2 minutes to prepare the night before. Best part, I got to indulge in all my favorite fruits I was craving during my pregnancy!6302

    oh i lovee Quaker so much! i can literally eat Quaker oatmeal every morning.

    Gosh, I love sleep too. I have two little ones and although they’re older, the 5 years still gets up most nights. I’m a huge fan of Quaker oats and it’s something we use quite a lot in our home. I will have to try the recipe.
