Today, I’m dreaming of Paris. After my last trip in the desert, I’m in the mood for a stroll down to L’Esplanade des Invalides to grab some madeleines while I take in the city with its series of beautiful lush green parks. Now it will be some time before I can make that dream come true, but in the meantime, I can always make a batch of Classic French Madeleines with a special twist. Why the special twist? Well, it’s for a special mom and grandma and the perfect gift for Mother’s Day.

The best part about this recipe is that it’s super easy and fast to make. As a person who struggles with baking desserts, this is one recipe I’ve mastered through the help of my close friends and that I feel confident making on my own…or with the help of my two adorable sous chefs. Oh, did I mention that they will disappear really fast?!

But today’s recipe of my Classic French Madeleine’s come with a treat – this treat is provided by my favorite ethically sourced organic chocolate from Green & Black’s. I first discovered this brand of chocolate when a friend of mine offered it to me. It was love at first bite! It’s not too sweet, incredibly smooth and rich in flavour. After I learned that it contains a high concentration of cacao, hence you get that intense rich flavor, it became our favorite brand of chocolate. Also, when it comes to creating a special treat for my mom, I will only use the first-class ingredients – that includes using only premium quality organic Milk Chocolate and White Chocolate from Green & Black.

Tools: To make these Classic French Madeleine’s, you need a Madeleine Mould Sheet. Plus to save time, you need a mixer to help you beat the eggs until they turn pale and thick.

Green & Black’s Chocolate: For this special batch of Classic French Madeleine’s, the twins helped me select Milk Chocolate and White Chocolate to make them extra special for my mom, their grandma. So let’s get started!

Classic French Madeleine, Chocolate Dipped Madeleine's
  1. In your mixing bowl, combine the two eggs, granulated sugar, zest of lemon and vanilla extract.
  2. Mix the ingredients in the electric mixer on high setting for 5 minutes or until the egg mixture is pale and forms ribbons when you lift the beater.
  3. Sift and mix the flour, baking powder, and salt.
  4. Fold the dry ingredients into the wet ingredients. Add 3-4 tbsp at a time.
  5. Once done, fold the melted butter in the same manner.
  6. Cover and refrigerate the mixture for 30 minutes.
  7. Set the Oven temperature at 200 °C (400 °F). Coat the Madeleine molds lightly with butter and lightly dust it with flour.
  8. Scoop out 1.5 tbsp of the mixture into the molds and insert in the middle a small piece of your favorite Green & Black Chocolate.
  9. Bake the Madeleine's for 8-9 minutes or until they are lightly golden.
Recipe Notes

For that special treat, I dipped the Madeleine's in milk chocolate and sprinkled some white chocolate over it. To do this:
1. Break the remaining Green & Black Milk Chocolate from the above recipe and melt it in the microwave for 30 seconds.
2. Do the same for a new bar of Green & Black White Chocolat.
3. Add 3 tbsp of milk to both mixtures until the consistency is smooth.
4. Dip your madeleines into the Green & Black Milk Chocolate mixture.
5. Set it is aside for 2-3 minutes until it is cool.
6. Decorate the madeleines with the white chocolate mixture.
